Some of my earliest memories as a child was baking honeybee cookies with my dad. This is a recipe from a children's alphabet cookbook which was probably my very first cookbook and where my love of cooking began.
I will admit in the inbetween years - I developed quite an aversion to honey... until I discovered local raw honey which is absolutely unbelievable. My only experience with honey was the honey bear from the grocery store, which is terrible after finally trying real honey. Such a difference!!
Honeybee Cookies
Mix all ingredients together in a bowl:
1/2 cup (1 stick) of softened butter (room temp)
1/2 cup packed brown sugar
1/2 cup of honey (use raw honey!!)
1 egg
1 1/2 cup Domata flour
1/2 teaspoon baking soda
1/2 teaspoon salt
vanilla
1/2 teaspoon cinnamon
1 teaspoon cardamon
*Also a little orange zest would be amazing in here!! But I didn't have any.
Set the dough in the fridge to firm for about 30 minutes.
Scoop on to a cookie sheet covered in parchment paper - these really spread out so make sure to leave quite a bit of room. It also doesn't make a very big batch - only about 12 cookies unless you use a much smaller scoop.
Bake at 375 degrees for 9 minutes. Remove from parchment from pan to cool.
These cookies are very very moist and chewy! They also stick together so layer them between parchment if you put in a tupperware.
