I've been in a make-ahead meal mood lately and this couldn't be easier and nothing freezes better than pasta dishes!
This is just too easy!
one:: Cook up some ground hamburger - I always add diced onion and cumin for flavor. Then to make jarred pasta sauce extra special (and take away that canned flavor) just add a heaping tablespoon of brown sugar plus a spoonful of cocoa powder. You wouldn't believe what a difference this makes.
two:: To your favorite gluten free pasta (cook according to package directions) add one small container of sour cream and half a container of cottage cheese - add when the pasta is still warm so it can help melt the cheese and get all gooey and delicious.
three:: At this point you can pour all the pasta into a large baking pan and bake immediately or into individual pans for the freezer. Top with the hamburger pasta sauce and a little extra shredded cheese. Then either cover with foil and bake or into the freezer.
Done!!
** If you froze the pasta - when ready to eat, just put the pan into a 375 degree oven for about an hour and it will be ready to go any night of the week!
